- 1 lb flank steak or skirt steak
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 teaspoons vinegar
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1 bunch scallions, chopped
- 2 sprigs fresh thyme
- 1 teaspoon allspice
- 2 scotch bonnet peppers, chopped (seeds removed for less heat)
- 1 bell pepper, sliced
- 1 medium onion, sliced
- 2 tablespoons vegetable oil for stir-frying
Instructions
- Slice the beef into thin strips. In a bowl, combine soy sauce, brown sugar, vinegar, garlic, ginger, scallions, thyme, allspice, and scotch bonnet peppers to create the marinade.
- Place the beef in the marinade, and refrigerate for at least 30 minutes, preferably overnight.
- Heat vegetable oil in a large skillet over high heat. Add the marinated beef in batches, stir-frying each batch for 3-5 minutes until the beef is seared and tender.
- Once all the beef is cooked, add the bell pepper and onion slices to the skillet. Stir-fry for an additional 2-3 minutes to soften the vegetables while maintaining their crispness.
- Serve with rice and peas or fried dumplings for an authentic Jamaican meal.
Notes
Ensure the beef is sliced thinly to allow it to cook quickly over high heat. If you prefer a milder version, remove the seeds from the scotch bonnet peppers.
